Rolanda’s signature chicken and veggie alfredo has been a go-to dish for years, packed with real dairy ingredients like butter, Parmesan, mozzarella, and heavy cream that bring high-quality protein, flavor, and comfort to every plate.

“There’s no playbook for raising a top athlete, but in this house, we had a blueprint: real dairy, real ingredients, and protein-rich meals like this chicken alfredo that helped fuel Faizon’s growth from day one,” says Rolanda Brandon. “You don’t build greatness overnight, but you can build it from the kitchen.”

How Can You Make Rolanda Brandon’s Chicken & Veggie Alfredo? 

Try Rolanda’s Chicken & Veggie Alfredo

Ingredients

  • 2 pounds boneless, skinless chicken breasts 

  • 2 cups broccoli florets 

  • 2 cups baby spinach 

  • 1/2 cup chopped onions 

  • 2 tsp minced garlic 

  • 2 tbsp butter 

  • 2 cups pepper jack cheese 

  • 2 cups mozzarella cheese 

  • 2 cups Parmesan cheese 

  • 2 cups Asiago cheese 

  • Olive or avocado oil 

  • 16 oz heavy whipping cream 

  • 3–4 cups chicken broth 

  • 2 tbsp all-purpose flour 

  • Garlic powder 

  • Onion powder 

  • Oregano 

  • Red pepper flakes 

  • Salt 

  • Black pepper 

Directions 

  1. Preheat oven to 350°F. 

  2. Rub chicken breasts with oil. 

  3. Season with garlic powder, onion powder, oregano, red pepper flakes, salt, and black pepper. 

  4. Sear chicken in a skillet over medium-high heat until golden brown on both sides. Remove and let rest. 

  5. Add butter to skillet, then sauté onions and garlic. 

  6. Sprinkle in flour and stir, then pour in chicken broth. 

  7. Stir in heavy cream. 

  8. Slowly add 1 cup each of pepper jack, mozzarella, Parmesan, and Asiago, stirring until the sauce thickens. 

  9. Add spinach and broccoli. 

  10. Chop some of the chicken and fold it into the sauce. 

  11. Transfer everything to a baking dish. 

  12. Add remaining sliced chicken on top and cover with the rest of the cheese. 

  13. Bake 30 minutes until bubbly and golden.
