Blueberry Compote and Lemon Yogurt Parfaits

Ingredients
1½ cup frozen blueberries
2 Tbsp water
2 Tbsp fresh lemon juice
2 Tbsp honey
2 cups lemon yogurt*
½ cup granola
2 tsp lemon zest
Notes
*If you can’t find lemon yogurt, stir 1 tablespoon of lemon curd into vanilla yogurt for a tangy and sweet substitution.
**Store remaining blueberry compote in an airtight container in the refrigerator for up to 5 days. Serve remaining compote over yogurt or pancakes or stir into oatmeal.

Instructions
Bring blueberries, water, lemon juice, and honey to a boil in a small saucepan. Reduce heat to medium-low and simmer for 10 minutes, stirring occasionally, or until berries begin to burst. Transfer to a small bowl and cool completely.
To assemble parfaits, layer ½ cup yogurt, 2 tablespoons granola and 2 tablespoons blueberry compote** into the bottom of 2 glasses. Repeat layers then finish with 1 tsp lemon zest.
