Ingredients

2 cups white cornmeal

½ cup flour

½ cup sugar

2 cups buttermilk

¼ cup canola oil

2 eggs

Instructions

Preheat the oven to 350°F.

In a large mixing bowl, whisk together the cornmeal, flour, and sugar. Set aside.

Heat canola oil in a 9-inch cast-iron skillet over medium heat.

Add buttermilk and eggs to the dry ingredients. Stir until smooth.

Once the oil reaches a simmer, carefully pour it into the batter and mix.

Pour the batter back into the hot skillet.

Bake for 45 minutes or until golden brown.

Let cool slightly, then slice & serve!
