Mango Blue Cheese Salsa Dip

Ingredients
2 small mango, diced
¼ small red onion
Cilantro, handful
2 small lemon
1 jalapeño
1 medium cucumber
¾ cup blue cheese

Instructions
Remove mango from peel.
Dice mango, red onion, and jalapeno (add seeds for desired spice level). Place into a medium/large bowl.
Using a paring knife, chop cilantro finely. Add to the bowl.
Cut lemons in half and squeeze juice into the bowl.
Add blue cheese crumbles into the bowl.
Mix together until ingredients are evenly distributed.
Enjoy with your favorite chips or as a standalone dish! Store in the refrigerator until you’re ready for more!
