Creamy Greek Yogurt Mashed Potatoes

Ingredients
5 pounds russet potatoes, peeled and cut into 1-inch chunks
3 garlic cloves, minced
3 Tbsp salt, divided
1 cup plain Greek yogurt
1 cup reduced-fat milk
2 Tbsp butter
2 Tbsp Kosher salt
1 Tbsp freshly ground pepper

Instructions
Add potatoes and garlic to a large pot and cover with cold water filling 1-inch above the potatoes. Add 1 tablespoon salt and bring to a boil over high heat. Once boiling, reduce heat to medium and cook, uncovered, 15 to 20 minutes or until potatoes are fork-tender. Drain and transfer to a large bowl.
In a small saucepan, combine Greek yogurt, milk, butter, 2 tablespoons salt and pepper. Whisk until ingredients are warm and butter has melted.
Add half of the Greek yogurt mixture to the warm potatoes and begin mashing. Continue to add remaining yogurt mixture while mashing until desired consistency is reached. Serve warm.
