Ingredients

For the Baked Oatmeal:

1 cup rolled oats

1/2 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp baking powder

1/2 cup unsweetened applesauce

1/2 cup whole milk

1 egg

1/4 tsp vanilla extract

For the Parfait:

1 cup plain whole milk Greek yogurt

1/2 cup pumpkin puree

1/2 tsp cinnamon

2 tbsp unsweetened applesauce (optional, for extra sweetness)

High Protein Dairy Toddler Pumpkin Parfait w/ Baked Oatmeal

Instructions

1. Preheat Oven

Preheat your oven to 350°F (175°C). Grease a small baking dish or line with parchment paper.

2. Mix Baked Oatmeal

In a bowl, combine oats, cinnamon, nutmeg, and baking powder.

In a separate bowl, whisk together applesauce, whole milk, egg, and vanilla extract. Pour wet ingredients into the dry ingredients and mix until combined.

3. Bake the Oatmeal

Pour the oatmeal mixture into the prepared baking dish and spread evenly. Bake for 25–30 minutes or until set. Let it cool completely before cutting into small squares or crumbling for the parfait.

4. Prepare Pumpkin Yogurt Mixture

In a bowl, mix the pumpkin puree, cinnamon, and applesauce (if using). Set aside.

5. Assemble the Parfait

In a toddler-friendly cup or bowl, layer crumbled baked oatmeal, Greek yogurt, and pumpkin mixture. Repeat the layers until the container is full.

6. Serve and Enjoy

Top with a sprinkle of oats or a tiny bit of cinnamon for garnish, if desired.
