Growing up on a farm shaped how I see food, especially dairy foods. Food is not just fuel, but something deeply connected to family, land, and tradition. I remember sitting on the porch with my grandparents, shelling peas and soaking up stories. It taught me the value of knowing where my food comes from and how to care for it from seed to table.

One of the most meaningful parts of this project has been reclaiming dairy in a way that feels familiar—pairing it with the foods we know and love. It’s not about changing tradition, but building on it in a nourishing way.

Take okra, for example. A traditional food from the African continent, okra is packed with nutrients like fiber, but it also has that polarizing texture. Some people love it, others not so much. That’s why it’s often deep-fried. But grilling it? That’s the best of both worlds: crispy edges, no slime, and no extra oil.

Adding a creamy herb yogurt dip takes this dish to another level. The tangy freshness of yogurt with dill and garlic complements the smoky okra perfectly. Plus, for folks who are lactose intolerant, the live cultures in yogurt can make it easier to enjoy dairy.

And then there are the tomatoes, bright, juicy, and a sign that summer has arrived. Growing up, I remember our windowsills being lined with green and orange-hued tomatoes, ripening in the sun. Tomatoes are hydrating, rich in lycopene, and full of flavor. Additionally, the cheese adds high-quality protein and calcium and makes this dip a really solid starter or addition to a meal.

When I think about ancestral wisdom and the natural rhythms of the season, I’m reminded that tomatoes show up exactly when we need them most. Paired with salty queso fresco and crispy cornbread, this salsa is more than a snack—it’s a way to honor where we come from and how we keep growing.
