Ingredients
1 cup sugar
3 large eggs
2 cups pumpkin puree
1 1⁄2 cups milk
1 tablespoon vanilla
1 1⁄2 teaspoons cinnamon
1 teaspoon lemon zest
1 teaspoon ground ginger
1⁄2 teaspoon ground nutmeg
1⁄2 teaspoon salt
1⁄4 teaspoon ground cloves
1 (9-inch) deep-dish pie crust

Preheat oven to 425°.
Combine sugar and eggs with a hand mixer on medium speed until well combined.
Add pumpkin, milk, eggs, and spices. Mix on low speed until all ingredients are combined.
Pour mixture into prepared pie crust. Bake at 425° for 15 minutes, then turn oven temperature down to 350° and continue baking for 30-45 minutes, or until the center of the pie is firm.
Remove from oven and let cool.
Serve at room temperature.
